Ready in just 20 minutes, this tortilla-based omelette is the perfect combination of crispy edges and fluffy, cheesy egg goodness in the center. It’s ideal for brunch, lunch, or even a fuss-free dinner. You only need a few ingredients and one pan!
📝 Ingredients (Serves 4)
- 1 large tortilla (whole wheat or plain)
- 3 eggs
- 1 teaspoon cottage cheese
- 2–3 teaspoons grated gouda cheese (or any meltable cheese)
- A pinch of salt
- A dash of black pepper
- A sprinkle of paprika (optional, for color and flavor)
👩🍳 Instructions
1. Preheat & Prep the Base
Preheat your oven to 180°C (350°F).
Take a small oven-safe baking dish or pan (a pie dish or even a galaktoboureko tray works well) and gently press the tortilla into the dish, allowing the edges to rise up slightly around the sides. This forms your edible crust!
2. Whisk the Egg Mixture
In a bowl, crack the eggs and add the cottage cheese. Season with salt, pepper, and paprika.
Whisk until everything is well combined and smooth.
3. Assemble & Bake
Pour the egg mixture into the tortilla base.
Sprinkle the grated gouda cheese evenly on top.
Place in the preheated oven and bake for 15 minutes, or until the eggs are fully set and the cheese is melted and golden.
4. Serve & Enjoy
Once the omelette is puffed and lightly golden, remove it from the oven.
