Adjust Servings:
325g (11oz) frozen chopped spinach
1 Peeled and chopped Onion
30g (1oz) Margarine
30g (1oz) flour
900ml (1/2 pints) milk
150ml (1/4 pint) Cream
Pinch Ground nutmeg
Garnish Cream
Salt
Pepper

Cream of Spinach Soup

Allow spinach to thaw.
Drain off excess liquid.
Heat butter in pan and fry chopped onion until transparent.
Stir in flour and gradually add milk, stirring all the time until thickened.
Season with salt and pepper and nutmeg.
Stir in spinach and cook for 10 minutes.
Stir in all but 15ml (1 tbsp) of cream.
Re-heat carefully, do not re-boil.
Garnish with remaining cream and serve.
