Ingredients:
1 red onion
1/2 orange bell pepper
1 small zucchini
1 small eggplant
1 corn cob
8 mushrooms
4 small tomatoes
For the Marinade:
3 tbsp olive oil
1 garlic clove, chopped
1 tsp basil
1 tsp oregano
Salt
Pepper
Preparation:
Peel the onion and cut it into eighths. Cut the bell pepper into bite-sized pieces. Slice the zucchini and eggplant into thick rounds. Boil the corn cob in salted water for 10 minutes, then remove and cut into 4 pieces.
Mix all the ingredients for the marinade together.
Thread the vegetables onto four skewers in this order: onion, zucchini, mushrooms, bell pepper, tomatoes, corn, eggplant, mushrooms, zucchini, and onion. Brush the skewers with the marinade.
Grill the skewers on all sides for about 10–15 minutes.
