  • 3 eggs

  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 200g fresh cherries, pitted and halved
  • 120ml red wine
  • 70g dark chocolate, grated or finely chopped

Instructions

Step 1: Prepare the Cherries

Wash and halve the cherries, removing the pits. In a bowl, toss them with 30g of sugar and 120ml red wine. Let them sit and soak for about 20 minutes, then strain to remove the excess liquid. Set aside.

Step 2: Make the Muffin Batter

In a large mixing bowl, beat the eggs, vanilla, and remaining 200g of sugar together until light and fluffy.

Add in the kefir and sunflower oil, mixing until smooth and fully combined.

Step 3: Add Dry Ingredients

Sift together the flour and baking powder, then gradually fold into the wet mixture. Stir in the grated dark chocolate, mixing gently until you have a smooth batter.

Step 4: Assemble the Muffins

Preheat your oven to 170°C (fan-forced). Line your muffin tin with paper liners or lightly grease each mold.

  • Fill each mold about halfway with batter.
  • Place two cherry halves in each muffin cup.
  • Top with another spoonful of batter, covering the cherries but leaving room for the muffins to rise.

Step 5: Bake

Bake for 25–30 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let cool slightly before serving.
