Ingredients (Makes 8 bars)

  • 1/2 cup all-purpose flour
  • 1 cup rolled oats
  • 1 egg
  • 2 tablespoons butter (softened)
  • 1 cup raisins
  • 1 small handful of chopped or crushed almonds
  • A pinch of ground cinnamon (to taste)
  • A splash of water (only if needed to loosen the batter)

Instructions (Prep & Bake: ~45 minutes)

  1. Preheat & Prep
Preheat your oven to 180°C (350°F). Line a round or rectangular baking dish with parchment paper for easy removal.
  2. Combine Dry Ingredients
In a large mixing bowl, combine the flour, oats, raisins, and a pinch of cinnamon. Stir to evenly distribute.
  3. Mix Wet Ingredients
In a separate bowl, beat the egg and softened butter together until smooth and creamy. You can use a hand mixer or whisk for this step.
  4. Bring It All Together
Pour the egg mixture into the bowl with the dry ingredients. Stir well until everything is evenly combined. If the mixture feels too dry or crumbly, add a small splash of water to help bind it together.
  5. Shape & Top
Spread the mixture evenly onto the prepared baking dish. Press it down slightly to flatten. Sprinkle the chopped almonds over the top, gently pressing them into the surface. Pre-cutting the bars before baking can make them easier to slice later.
  6. Bake
Place the dish in the oven and bake for about 30 minutes, or until the top is golden brown and firm to the touch.
  7. Cool & Store
Once baked, allow the bars to cool completely in the pan. Slice into individual portions, then transfer to an airtight container and store in the refrigerator. They’ll stay fresh for up to a week.

Tips & Variations

  • Add-ins: Feel free to mix in other dried fruits like cranberries or chopped apricots.
  • For a sweeter touch: Drizzle with a little honey or maple syrup before baking.
  • Nut-free version: Omit almonds or replace with sunflower or pumpkin seeds.

Enjoy these oat and raisin cereal bars as a healthy snack on the go or as a treat with your afternoon tea!
