Healthy Aegina Pistachio Bars

Ingredients (Makes about 12 bars)

  • 15 royal dates (pitted)
  • 4 tablespoons peanut butter (preferably sweetened with stevia)
  • 1 handful of Aegina pistachios (chopped)
  • 60–70g dark chocolate couverture (sweetened with stevia)

Instructions

Step 1: Prep the Dates

Carefully open the dates and remove the pits if they’re not already pitted. Lay them flat on a tray or board, with the open side facing down.

Step 2: Flatten

Use the bottom of a glass to gently press down on the dates. This helps to flatten and slightly merge them, forming a sticky base for your bars.

Step 3: Add the Nut Butter

Spread a generous layer of peanut butter across the surface of the flattened dates. Make sure it reaches the edges. Then sprinkle a layer of chopped Aegina pistachios on top.

Step 4: Chocolate Topping

Melt the chocolate couverture in a heatproof bowl over simmering water or in the microwave in short bursts. Once melted and smooth, pour it over the peanut butter and pistachio layer. Spread evenly using a spatula or the back of a spoon. Top with an extra sprinkle of chopped pistachios for added crunch and color.

Step 5: Chill

Place the tray in the refrigerator and let the bars set for about 2–3 hours, or until the chocolate hardens.

Step 6: Slice & Store

Once firm, remove from the fridge and cut into bars or bite-sized squares. Store them in an airtight container in the fridge—they’ll stay fresh and delicious for several days.
