This easy, nutritious baked omelette is a hug on a plate. With creamy yogurt, fresh spring onions, and crumbled feta, it’s light yet full of flavor. Plus, it’s oven-baked—so no standing over the stove. Perfect as an appetizer, light lunch, or wholesome snack.
📝 Ingredients (Serves 2)
- 4 large eggs
- 400 g strained yogurt (Greek-style works best)
- ¾ cup oat flour (or ground oats)
- 150 g feta cheese, crumbled by hand
- 1 bunch fresh spring onions, finely sliced
- 3 tablespoons water
- 1 tablespoon olive oil
👩🍳 Instructions
1. Prepare the Mixture
In a mixing bowl, beat the eggs with the water using a fork until they become frothy.
Add the yogurt and mix until smooth and creamy.
Stir in the oat flour, olive oil, and chopped spring onions.
Finally, fold in the crumbled feta cheese. The mixture should be thick but pourable.
2. Bake It
Line a medium-sized baking dish or tray with parchment paper for easy removal.
Pour in the mixture, spreading it evenly with a spatula.
Bake in a preheated oven at 190°C (375°F) with fan for around 45 minutes, or until golden and set in the middle.
The edges should be slightly crisp, and the top beautifully puffed.
3. Cool, Slice & Serve
Let it cool slightly before slicing into squares or wedges.
Serve warm with a fresh green salad, cherry tomatoes, or a dollop of yogurt on the side.
It also tastes amazing cold—perfect for picnics, lunchboxes, or next-day snacks!
